Tasty Tuesday


Today Logan and I baked Guilt free Pina Colada Cupcakes. I used a recipe I got from my new Hungry Girl cookbook. You mix 2 cups yellow cake, 1 1/2 cups crushed pineapple with juice and 1/2 tsp coconut extract. Divide into 12 cupcakes and bake at 350 for 20 min.
Since we didn't use any eggs Logan got to lick the spoon. Yum!





I also made a frosting. I just mixed a cup of cool whip free, 1/2 cup leftover pineapple and tsp vanilla sugar free pudding mix. We all thought they tasted great and pretty guilt free at 115 calories.
