To make an easy pumpkin gingerbread we mixed:1 box gingerbread mix
1 cup pumpkin puree
1/4 cup egg substitute
1/4 cup water
Mix and bake according to package directions. I changed it from the original recipe which called for one egg and one cup of water and it turned out really yummy.
